Prayer before the battle
Yes, be bold and strong!
Banish fear and doubt!
For remember,
the Lord your God
is with you wherever you go.
Joshua 1:9
War Cake
Boiled Raisin Cake
3 cups of raisins
2 tablespoons shortening
2 cups of water
1 cup white sugar
1 tsp cloves
1 tsp cinnamon
Mix all of the above ingredients
in a saucepan and boil until raisins
are plump-approximately 10 min.
Let cool in pan until shortening
becomes solid again.
In a separate cup add 1 tsp baking
soda dissolved in 1/2 cup boiling
water. (this will fizz up)
Add approximately 3 cups of flour to
raisin mixture until it is a semi firm
mixture.
While adding flour add any dates,
nuts, cherries or coconut as desired.
The more fruit added the richer the
cake.
Divide the batter between two loaf
pans.
Bake at 275 for 2 hours.
Enjoy one loaf and freeze the second
one for another time
This cake was made during the war
years when rationing meant eggs
were in short supply and baking
anything required innovate thinking.
HH's Grandmother made War Cake
and sent it to her sons, Abbot and Norman
who were overseas during the War.
In those days parcels took quite awhile
to get to the soldiers. The moist fruit in
it stayed fresh for a long time and so
it made a perfert "War Cake".
Thankyou - Mahalo
to all of you
who have and are serving our country.
