
This is the time of year when there is lots of
Zucchini Squash available so I thought we should
make some Zucchini Bread- This makes two loaves-
1 to eat now and 1 for the freezer or a friend.
ZUCCHINI BREAD
3 cups flour
2 tsps baking soda
1 tsp salt
1/2 tsp baking powder
3/4 cup pecans, finely chopped
3 eggs
2 cups sugar
1 cup vegetable oil
2 tsps vanilla extract
2 cups zucchini, shredded
1 (8 ounce) can crushed pineapple well drained.
Preheat oven to 350.
Grease and flour 2 (8x4x3)loaf pans.
Combine flour, baking soda, saltbaking powder and pecans: set aside.
Beat eggs lightly in large bowl add sugar, oil and vanilla and
beat until creamy.
Stir in zucchini and pineapple.
Add dry ingredients, stirring only until moistened.
Spoon batter into 2 pans.
Bake at 350 for 1 hour oruntil done.
Cool 10 minutes in pan.
Turn out on rack to finish cooling.
Now think which friend will I share this with
Enjoy with a little butter or jam.
