
YUMMY CHICKEN MELTS
Just in case you might have a bit of chicken
or turkey left over -try these Melts
1 1/2 cups cooked chicken diced
1/3 cup finely diced celery
2 tbsp each of mayonnaise and plain yogurt
1 tsp prepared mustard
Salt & pepper to taste
4 slices of toast or bagels or
english muffins or hot dog buns
4-8 slices of tomato
1/4 cup grated cheddar cheese

In a medium bowl, stir chicken
with celery, yogurt, mayonnaise,
mustard, salt and pepper until
combined.
Split the buns, muffins or toast in
half.
Toast then place on a cookie

tomatoes on buns, cutting to fit if
necessary.

Top with chicken mixture.
Sprinkle with grated cheese.
Broil until cheese is bubbly and melted
about 1 minute under the broiler or in a
toaster oven.
Serve 4 a hearty lunch with a few raw
vegetables.
